They have also strolled the road of dishwashers, harvest gold and avocado appliances, many kitchen gadgets that were supposed to save time, and the rage of microwave cooking that could have possibly retired the range!

When these seasoned cooks and bakers come to an activity that focuses on food, they are not tepid in expressing lessons that they have learned while stirring, slicing and creating in the kitchen. Granted, cooking shows reveal many tips about preparing food. However, being in the company of souls who have stood in the front line with spatulas, strainers, pressure cookers and worked often without several kitchen convivences is a true insight to family style cooking — plus, it is altogether entertaining and educational. I can not begin to tell what a joy it is to be steeped in their vast knowledge.

Fluffy Tapioca Cream

This is an easy, delicious and attractive dessert that will tempt you to go adventuring and invent other creative toppings such as minted orange, fancy fig and even a top hat of chocolate! Oh, the possibilities!

2 eggs, separated

6 tablespoons sugar, divided

¼ teaspoon cream of tartar

3 tablespoons Minute Tapioca

2 cups milk

1 teaspoon vanilla extract

Beat egg whites in a medium bowl with mixer on high speed until foamy. Add cream of tartar and gradually beat in 3 tablespoons of sugar until soft peaks form. Set aside.

Mix tapioca, milk, egg yolks that have been slightly beaten, and remaining sugar in medium saucepan. Let stand 5 min. before heating.

Bring to a full boil (a boil that doesn’t stop bubbling when stirred) on a medium heat, stirring constantly. Remove from heat. Add egg white mixture, fold until blended but not totally smooth. Add vanilla.

Transfer to attractive dessert dishes. Serve warm or chilled. Keep refrigerated. Makes 6-8 servings.

Rosy Raspberries

2 cups of fresh raspberries

¼ cup fresh or prepared orange juice

¼ powered sugar

Teaspoon of grated orange rind

Blend together carefully and let set 30 minutes before serving.

1 cup milk

4 hard-boiled eggs, finely chopped

4 tablespoons celery, finely chopped

2 tablespoons sweet pickles, chopped

2 tablespoons liquid from pickles

1 tablespoon mayonnaise

1 teaspoon Worcestershire sauce

Ferrero Rocher Cupcakes

Ingredients

Cupcakes

• 150 gm unsalted butter

• 150 gm light brown sugar

• 3 medium eggs

• 125 gm self-raising flour

• 25 gm cocoa powder

• 12 Ferrero Rocher

Nutella Buttercream

• 150 gm unsalted butter (at room temp.)

• 300 gm icing sugar

• 150 gm Nutella

Decoration

• 12 Ferrero Rocher

Steps

Preheat your oven to 180C/160C Fan, and prep your cupcake cases.

Beat the butter and sugar together until light and fluffy, and then add in the flour, cocoa powder, and eggs.

Beat again until smooth, then split evenly between the cases.

Pop a Ferrero Rocher on top of each cupcake, and push it in ever so slightly.

Bake in the oven for 17-20 minutes, or until baked. Cool completely.

Buttercream

Beat the unsalted butter (best at room temperature), for a couple of minutes until smooth.

Add in the Nutella and beat again briefly.

Add in half of the icing sugar and beat it, and then the other half and beat it.

If its too thick, add in 1tbsp of boiling water at a time till it becomes pipeable.

Fill your icing bag with an open flower tip (or any tip that you have available) and pipe the Nutella Buttercream on, then sprinkled on some hazelnuts, and add another Ferrero Rocher on top!

Vanilla Cakepops

Ingredients

• One box of Vanilla cake mix or your favourite home-made vanilla cake.

• Other ingredients called for on the box including water/oil/eggs

• Make the cake following the instructions on the box

• Cakepop sticks or straws

For frosting

• 7 tablespoons unsalted butter room temperature

• 1 ¾ cup icing sugar

• 2-3 teaspoons heavy cream or milk

• 1 teaspoon vanilla extract

Coating

• 2 cups of white candy melts or white chocolate (make sure to use the best quality)

• 2 teaspoons vegetable oil

White sprinkles

• Yellow food colour — optional (add to melted chocolate and drizzle over the cakepops)

Steps

Cake

Preheat oven to 350°F. Grease a cake pan or baking dish.

Prepare the cake batter according to the instructions on the package.

Bake according to the instructions (30-35 minutes) or until a toothpick inserted in the centre comes out clean.

Let the cake cool to room temperature on a wire rack.

Keep a flat baking tray (you can use a plate too) lined with baking paper / parchment paper

Frosting

Add softened butter into a large bowl, and beat the butter with a handheld mixer on medium speed until creamy

While the mixer is running, add 1/2 cup of confectioner’s sugar. Mix until combined. Add heavy cream, vanilla, candy the rest of confectioners’ sugar, a little at a time.

Increase the speed to high and beat for 3 more minutes.

Make the frosting by beating the unsalted butter in a stand mixer or use a handmixer. Beat the butter till its pale yellow in colour and then gradually add the icing sugar. If the icing is too thick, add a 2 – 3 tsp of milk or heavy cream.

Once the cake has cooled down, put in a large bowl. Use your hands to crumble the cake and then add the frosting (little at a time as you may not need all of it. Mix well till you get a dough like consistency ( it takes 2-3 mins)

Make small balls out of the cake mix. Place them on the lined baking tray. Place them in the fridge to cool down for 20 mins

Meanwhile melt 2 tbsp of the candy melts / chocolate (50 gm) in the microwave at 30 second intervals and stirring in-between (be careful as it can burn easily).

Dip the tip of the cakepop sticks into the melted candy melts/chocolate. Then insert each stick into a call ball about half-way.

Freeze for about 30 minutes.

Cake Balls

Right before they are ready to be taken out of the freezer, melt the rest of the candy melts / chocolate. Add the oil and mix well. Pour the mix in a tall glass.

Dip the cake ball into the coating until it’s completely covered. Gently tap the stick against the edge of the glass to allow excess coating to drop off.

Decorate the top of the ball with white sprinkles and place upright into a box. Repeat with the remaining cake balls.

Rasmalai Cheesecake

INGREDIENTS

For the crust/base :

• Digestive biscuits (crushed) 2 1/2 cups

• Unsalted butter (melted) 150 gm

For the batter :

• Philadelphia cream cheese (room temperature) 500 gm

• 1 tin (370 gm) sweetened condensed milk

• 1 cup (220 ml) whipping cream (cold)

• 10-12 pieces/500 gm rasmalai

• 1 cup rasmalai liquid (the same syrup in which you get the rasmalai)

• 20 gm gelatin

• 1/4 cup water (to bloom gelatin)

• Saffron (few strands)

• Pistachio sliced for garnish

• Rose petals for garnish (optional)

METHOD

Brush a 10 inch springform baking pan with butter and keep aside.

Mix the crushed biscuits and butter, transfer the mix to your greased baking pan. Press the mix down with the back of a spoon and level it. (I like to push the spread up onto the sides of the pan). Chill for 30 minutes.

In a stand mixer or a hand mixer, add the cream cheese and mix for a minute. Now add the condensed milk and mix well. (scrape the bottom of your bowl if using a stand mixer)

Add the whipping cream, rasmalai water and saffron strands.

Bloom gelatin by adding 1/4 cup water, mix well and keep aside for 5 minutes.

Then microwave for 30 seconds.

Add the gelatin to the cheesecake batter.

By now the biscuit base will be firm and chilled.

Take the rasmalai pieces, squeeze a little and add on top of the biscuit base.

Gently pour the cheesecake batter over the rasmalai pieces and refrigerate for 6-8 hours or preferably overnight.

Garnish with rose petals and pistachios.

To remove the cheesecake from the pan, let it sit at room temperature for 10 minutes and gently open the springform pan.

Born and raised in Vietnam, I have always been exposed to herbs and spices from my mother’s kitchen whether it be at home or through her work as a recipe and menu developer. As much as I am grateful to have a family engrossed in the restaurant industry, I have also dreamed of learning about Western foods and culture, which are considered luxuries back home. So, four years ago, when I heard about the chance to volunteer and possibly work with celebrity chefs and restaurateurs at the Food Network South Beach Wine & Food Festival presented by Capital One (SOBEWFF®), I became a volunteer.

This is my fourth year volunteering and this year the feeling is just as thrilling as when I picked my very first shifts. The whole experience is like going to class in a slightly different setting, learning from potential employers and applying skill sets when handling realistic situations.

As an international student, there are many employment restrictions when it comes to seeking work experience. But at SOBEWFF®, any student can work while earning scholarships. This year is the 22nd anniversary of the Festival. The motto of the Festival is “EAT. DRINK. EDUCATE.” I was able to do that with a hands-on learning experience by taking on various roles that have given me a great head start to test out different aspects of hospitality. For example, working in registration helped me understand the front-facing side of customer service as I greeted and checked in guests. As an inventory clerk, I got a back-of-house perspective from the loading docks.

My story is only one among many other passionate future leaders who are currently pursuing their degree at FIU. Student volunteers come from every major, including engineering, psychology, architecture and even disaster management. In total, more than 1,300 students work about 4,300 shifts at the Festival. 

My friend and fellow hospitality student Natalie Garcia is graduating with her bachelor’s in the fall. Natalie has had multiple experiences working with SOBEWFF®, helping out at major iconic events such as the Burger Bash and the Grand Tasting Village. This year, she’s a volunteer lead at Wine Spectator’s Best of the Best taking place at the famous Fontainebleau Miami Beach.

“I have been able to enhance many applicable skills such as teamwork, communication, adaptability, leadership and many more,” Garcia said. “I’ve volunteered in so many different positions because I wanted to try something different every time and expand my knowledge within each role. The most surprising thing I’d say is the number of connections one can make and the amazing memories.”

Nicolas Calvo Lozano is an international student from Colombia pursuing a master of science in hospitality management with a specialization in hospitality real estate development. Lozano has also undertaken different roles including event support, registration, logistics lead and, now, a volunteer recruitment coordinator.

“In the people industry, having the opportunity to be part of SOBEWFF® helps me to expand my creativity, apply my leadership skills, and improve my problem-solving skills. I am a huge fan of all types of events and SOBEWFF® is a unique experience that I couldn’t let pass. How amazing it is to support others and lead people toward a shared goal!” Calvo said.

According to Lozano, his SOBEWFF® experience has helped shape his approach to the customer service industry. From welcoming the first guest on-site, to maintaining a perfect workflow backstage, he says it’s all worth it thanks to the excitement and feeling of success when overcoming challenges on the spot. In addition, he says he’s become great at multitasking, negotiation, and leadership since they’re part of a typical SOBEWFF® day, all while building relationships with industry professionals.

As for me, this is my last Festival. It’s bittersweet, but I have learned a lot and matured over the years with each experience. My biggest advice to other students considering whether or not to volunteer: Just do it. Even if you’re not in hospitality, go ahead and take the opportunity to be a part of it, even if it’s one or two shifts. The experience is worthwhile.

But for now, I’ll cherish my last SOBEWFF® and one day plan to come back as a guest with my mom.
