In America, eating insects has mostly been relegated to a stunt game show (of the early aughts) and the occasional grasshopper taco on the menu of a more authentic Mexican restaurant. For centuries, though, bugs have been an integral part of diets around the world, providing a sustainable, economical source of protein in cultures from South America, Africa, Australia, and beyond. While the thought of choking down a tarantula, its hairy legs squirming wildly in protest, might seem offensive to some (all), restaurants across the globe are elevating the insect to gourmet status. René Redzepi of the world-renowned Danish restaurant Noma is no stranger to cooking (or in this case, not cooking) with insects. At his 2012 London pop-up, the legendary chef served crème fraîche dotted with live ants, and in Japan in 2015, Redzepi’s shrimp sushi also came crawling with the tiny black insects. At his two-month turn in Tulum, Mexico, the 14-course menu showcased the chef’s signature innovative interpretations of regional cuisine. One such course was a tostada with grilled espolon beans and creamy escamoles (ant eggs), prepared with grilled habanero oil and garnished with beach greens and flower petals.

Fried insects are a common snack in Cambodia, for sale at stalls throughout the country’s markets, but at the now-shuttered Bugs Cafe in Siem Reap they got a gourmet upgrade. The tapas menu featured traditional Cambodian dishes like wild spring rolls stuffed with ants, green papaya salad with grilled marinated scorpions and kaffir lime, and tarantula doughnuts, dipped in tempura, deep fried, and served with sweet chile sauce and mango chutney.

In Japan, bowls of hot, salty ramen might be topped with sliced pork, boiled eggs, dried seaweed, and in at least one Tokyo shop, bugs. According to Reuters, Ramen Nagi in Tokyo held a popular pop-up, serving insect tsukemen with crickets and mealworm-peppered noodles in a cricket, grasshopper, or silkworm powder-flavored broth. The full-course meal sold out within four hours and included the bowl of ramen, fried worm spring rolls, cricket rice, and ice cream flavored with insect powder.

Situated on a traditional Pembrokeshire farm, this charming restaurant in Wales is doing its part to make insect-eating mainstream. While fresh, locally sourced options abound for non-adventurous eaters, chef Andy Holcroft seamlessly blends bugs into both traditional British pub fare and international cuisine. Bug Wellington with mixed bugs and chestnuts wrapped in cricket crêpes and puff pastry, toasted cumin mealworm hummus, and Welsh cakes with cinnamon mealworms all get rave reviews, but one favorite is the signature bug burger. Made with toasted crickets, mealworms, and grasshoppers topped with spinach and sun-dried tomato and served with polenta fries and tzatziki sauce, think of it as an exotic version of a veggie burger.

Chef Hugo Ortega has been serving lime and salt-cured chapulines (grasshoppers) from Oaxaca at his eponymous Houston restaurant since 2007, but his latest spot offers even more opportunity to sample insect-based dishes common in his native Mexico. At Xochi, the James Beard Award finalist features grilled prime Black Angus rib eye served atop an ant mole; cocktails garnished with gusano (worm) salt; and Queso del Rancho, with housemade queso de cincho (cheese), chicharrones (fried pork rinds), and a trio of insects that includes worms, ants, and grasshoppers.

Bugs aren’t the only thing on the menu requiring an adventurous palate at Archipelago. The romantic candlelit restaurant in London’s Fitzrovia neighborhood serves up python carpaccio, marinated kangaroo skewers, and crispy zebra jerky, among other global delicacies. Try a side dish of Love-Bug Salad, made with worms and locusts, and save room for insect-focused desserts like chocolate-covered locusts and the Bushman’s Cavi-Err — blinis topped with coconut cream, vodka jelly, and caramelized mealworms.

Though the name might suggest an all-bug menu, the popular East Village restaurant serves innovative spins on traditional Mexican fare, both with and without insects. To go all in on bugs, though, try a smoky jalapeño margarita rimmed with black ant salt, the Croquetas de Chapulin (yucca-Manchego and grasshopper croquettes), and an order of the house guacamole. The recipe changes with delicious additions like diced mangoes, pomegranates, or fried chickpeas, but it’s always topped with a sprinkling of tangy, nutty ant salt. When asked, you definitely want to add guac here.

MANGO STICKY RICE

Ingredients
½ cup glutenous rice
1 cup coconut milk
½ cup coconut cream
2 tbsp sugar
1 tsp salt
For the topping —
Fried lentils (can be altered with toasted sesame seeds)
Mango slices, as per need

Method
First, cook the glutenous rice properly following the regular method (steaming or in water). Then mix in the salt, sugar, and coconut milk. Cook for another two minutes. Slice up your mangoes and keep them in the refrigerator to be able to serve cold. Once the rice cools down, on a plate, serve the rice, top with coconut cream, and mango slices. Then top with choice of crisps for texture. Add extra coconut cream on the side for extra goodness.

SUSHI BAKE

Ingredients
3 sheets fried nori (regular ones used for sushi)
3 cups cooked glutenous rice
15-17 pieces large prawns, de-veined and cleaned
2 tbsp cream cheese
1½ tbsp mayo
1 tbsp sriracha
1 tsp soy sauce
A pinch of black pepper
2 tsp vinegar

Method
First, marinate the prawns with soy sauce and pepper, for 10 minutes. Prepare rice by mixing vinegar to the cooked rice. In a bowl, mix the cream cheese, mayo, and sriracha properly. Pour that cheese mix into the prawns and mix well.

Cut the whole large nori sheets into four. Brush hands with oil, then in the nori sheets, place in 1 tablespoon of the cooked rice in the middle of the sheet. Then using your hands, place the rice properly spreading it through the corners, but leave gaps in the corners.
Take your muffin mould, brush oil in it. Then, press the nori with rice in them into the mould — they will look like flowers. After that, place in one tbsp of the prawn cheese mix into the rice cups. Bake in pre-heated oven for 18-20 mins at 175° C. Serve topping with spicy mayo/kewpie mayo, and soy sauce dip mixed with wasabi.

STREET STYLE THAI BASIL CHICKEN

Ingredients
½ chicken breast (around 200g)
5 cloves of garlic, if you like it garlicy
Red chilli, as per preference
3 tsp soy sauce, light
1½ tsp oyster sauce
1½ tsp sugar (better if adjusted as per taste)
1 tsp soy sauce (dark)
Oil
Thai basil, as per taste (Fresh mint leaves can also be used, but it will not be basil chicken by name. However, it will not differ much in terms of flavour or taste. Just make sure the mint is fresh)

Method
Cut your chicken into bite-sized pieces. Roughly crush together garlic and red chillies.

In a hot pan, add oil. Now, add the crushed garlic and chilli. This is my favourite part of the cooking, for the aroma it sets around. Stir fry that for just about a few seconds until flavours come out, and add in your chicken.

Fry the chicken for about a minute or so, and then pour in your light soy sauce, oyster sauce, sugar, and finally, the dark soy sauce. The reason for using both soy sauces is because of the depth of flavours they add individually and also to hit intricacy right!
Stir it all, and cook for about a few minutes. Right during the end, add in your basil, and give it just one stir and get off heat, because we do not want to overcook the leaves.

I highly recommend the dish with steamed rice, and oozing yolky fried egg; the yolk gives a silky texture to rice.

CRISPY FISH TACO WITH PICKLED CARROTS

Ingredients
1 fillet dory fish
1 tsp soy sauce
2 tsp oyster sauce
½ tsp pepper
1 tsp lemon juice
A pinch oregano
Tempura (A classic regular tempura batter made with ice-cold water for crispiness)
Flour, for regular tortilla
2 tbsp mayo
5-7 mint leaves, crushed
½ tsp lemon juice
½ carrot
½ cup vinegar

Method
First, slice the carrots using a peeler for a finer finish. Leave them to be pickled by taking in small glass bowl, and drenching in vinegar, a pinch of ground black pepper. Rest for at least 25 minutes.

Prep the fish by cleaning and cutting. Marinate using soy sauce, oyster sauce, pepper, lemon juice, and leave for 15 minutes. Make the tempura batter with ice cold water. Now, on the side make the tortilla with flour, water, and salt (regular taco tortilla). Once done toasting the tortillas, make the lime-mint aioli by mixing in mayo, lemon juice, and the mint with little bit of ground pepper.

Finally, fry the fish dipping in tempura batter in deep fry. Then assemble the tacos by placing first the fish, then the pickled carrots, and finally the aioli on top.

Enjoy hot and crispy. 

DATE FRAPPE

Ingredients
1 cup liquid milk
1 cup vanilla Ice cream
4-6 dates, depending on sweetness preferred
2 tsp coffee

Method
First cup the dates into smaller pieces and get rid of the seeds. Blend all the ingredients together, and serve cold.

However, for those of us who are trying to curb our carbohydrate intake, this version of the recipe is a great choice.

The overnight soaking and fermentation improve the nutritional content as well as the bioavailability of the nutrients present in the dals. Also, legumes are notorious for their lectin content (anti-nutrients). However, the processing in this recipe will reduce their lectin content considerably, making it easy to digest as well as richer in protein content.

Ingredients

1 cup Moong Dal

1/3 cup Urad Dal

Salt, to taste

Method:

– Wash and soak the dals separately for 12 hours.

– During this time change the water once.

– Grind the two dals separately and then mix.

– Mix in salt.

– Keep them to ferment for 8-10 hours.

– Steam them in an Idli maker.

– Once done, rub some ghee on the hot Idlis, remove it from the Idli maker, and serve.

2. Raw Garlic Chutney

This recipe is one of the simplest, quickest and most delicious ways of eating garlic. It goes really well with dhokla, rice, idli, etc.

Ingredients

8-10 cloves Garlic

1 tsp Red Chilli Powder

1 tsp Filtered Groundnut Oil

Method:

– Peel and crush raw garlic in a mortar and pestle.

– Add chilli powder and continue grinding.

– Once it becomes a fine paste, transfer the paste to a serving bowl and mix in the oil.

– The chutney is ready to use.

1/2 cup Steamed Beetroot

Ginger is anti-inflammatory and stimulates the release of gastric juices in the stomach. Kala namak is a digestive. Chillies boost metabolism. Long story short, this recipe is like a multinutrient supplement but tasty and unprocessed.

Ingredients

1 small bunch Coriander leaves, with stalks

Handful of Mint Leaves

Handful of Curry Leaves

3 tbsp Sesame seeds, soaked overnight

2-3 stalks Celery leaves

Lime juice or 3 Amla or Raw Mango

1 inch pc of Ginger

3-4 cloves of Garlic

Kala namak

2-3 green chillies

Method:

– Soak the sesame seeds overnight.

– Cut amla into small wedges.

– Blend everything together, you can add a little water for consistency.

– Adjust the taste for salt, spicy and tangy.

– Keep this in an airtight container and finish within 3-4 days. If you can make it fresh daily, then that will be the best.

5. Detox Khichdi

Ingredients

White Rice – 1 fistful per person

Moong Dal – 2 fistfuls per person

Chopped Greens (spinach, radish, carrot tops, beet greens, cauliflower greens,

fenugreek, malabar spinach, amaranth leaves) – 1 cup per person

Grated Cucurbit Vegetable (bottle gourd, ridge gourd, pumpkin, ash gourd,

baby watermelon, zucchini, snake gourd, butternut squash) – 1 cup

Garlic – 2 gloves

Ginger – 1-inch PC

Clove – 1

Black Peppercorn -2

Salt

Haldi

Water – 1/2 cup per person, approx

Grated Coconut – 1 tbsp per person

Coriander leaves – 1 tbsp per person

Ghee – 11 tsp per person

Method

– Soak the rice and dal mix for 6-8 hours.

– In a stock pot, place all the ingredients except coconut, coriander and ghee.

– Once everything starts boiling vigorously, slow the flame, cover the pot and let this simmer for about 20-25 minutes, stirring occasionally.

– Once the rice and dal are cooked thoroughly, switch the flame, cover the pot and let this sit for a few minutes.

– While eating, top the khichdi with ghee, grated coconut and coriander leaves.

– Eat this with the Green Chutney mentioned above.

6. Mulethi Tea

Ingredients

Mulethi Root – 2 cm pc

Fennel Seeds – 1 tsp

Ginger – 1 inch

Water – 500 ml

New Year’s Day is meant for fresh starts. But maybe even more, it’s meant for food.

As the new year arrives around the world, special cakes and breads abound, as do long noodles (representing long life), field peas (representing coins), herring (representing abundance) and pigs (representing good luck).

The particulars vary, but the general theme is the same: Enjoy food and drink to usher in a year of prosperity.

Here are 10 good-luck servings of New Year’s food traditions around the world:

Field peas or black-eyed peas are the base for Hoppin' John.

A major New Year’s food tradition in the American South, Hoppin’ John is a dish of pork-flavored field peas or black-eyed peas (symbolizing coins) and rice, frequently served with collards or other cooked greens (as they’re the color of money) and cornbread (the color of gold). The dish is said to bring good luck in the new year.

Different folklore traces the history and the name of this meal, but the current dish has its roots in African and West Indian traditions and was most likely brought over by slaves to North America. In Amsterdam, be on the lookout for Oliebollenkraams, little temporary shacks or trailers on the street selling packets of hot fried oliebollen.

Austria and neighbor Germany call New Year’s Eve Sylvesterabend, or the eve of Saint Sylvester. Austrian revelers drink a red wine punch with cinnamon and spices, eat suckling pig for dinner and decorate the table with little pigs made of marzipan, called marzipanschwein.

Good luck pigs, or Glücksschwein, which are made of all sorts of things, are also common gifts throughout both Austria and Germany.

In Japanese households, families eat buckwheat soba noodles, or toshikoshi soba, at midnight on New Year’s Eve to bid farewell to the year gone by and welcome the year to come. The tradition dates back to the 17th century, and the long noodles symbolize longevity and prosperity.

In another custom called mochitsuki, friends and family spend the day before New Year’s pounding mochi rice cakes. Sweet, glutinous rice is washed, soaked, steamed and pounded into a smooth mass. Then guests take turns pinching off pieces to make into small buns that are later eaten for dessert.

The French do enjoy their galette des rois.

The tradition of a New Year’s cake is one that spans countless cultures. The Greeks have the Vasilopita, the French the gateau or galette des rois. Mexicans have the Rosca de Reyes and Bulgarians enjoy the banitsa.

Most of the cakes are consumed at midnight on New Year’s Eve – though some cultures cut their cake on Christmas or the Epiphany, January 6 – and include a hidden gold coin or figure, which symbolizes a prosperous year for whomever finds it in their slice.

Cotechino con lenticchie is the yummy Italian pairing of sausage and lentils.

Italians celebrate New Year’s Eve with La Festa di San Silvestro, often commencing with a traditional cotechino con lenticchie, a sausage and lentil stew that is said to bring good luck (the lentils represent money and good fortune) and, in certain households, zampone, a stuffed pig’s trotter.
