McCoy represented her business, Gourmet Soul and Catering based in St. Louis, Missouri, while Chester-Tamayo brought the flavors from her Memphis, Tennessee soul food spot, Alcenia’s.

Check out their recipes below.

Macaroni & Cheese

Chester-Tamayo’s classic mac and cheese recipe uses macaroni shells and finishes in the oven for a beautifully cheesy, bubbly baked dish.

Ingredients

4 cups shell macaroni

2 eggs

2 1/2 cups evaporated milk

6 tablespoons salt (water and macaroni)

10 cups water (cover macaroni)

3 tablespoons pepper

3 cups cheese (you can use a combination of cheese blends)

1 cup pure butter or margarine

Directions

Pre-heat oven to 325 F.

Boil water and 2 tablespoons of salt. Once the water is boiling, add macaroni and cook for 15-20 minutes until tender. Use fork to test. While macaroni is boiling, beat eggs, milk, remaining salt and pepper into a sauce pan. Remove macaroni when tender. Drain and rinse in cool water. After draining take the cooked macaroni and place in a large casserole pan.

Add the butter to hot macaroni and stir. Add the cheese and stir well. Top macaroni with remaining cheese and pour milk mixture over it. Cover with foil and bake for 20-25 minutes in oven until done. Do not overcook.

Meatloaf

Chester-Tamayo also shared her famous meatloaf recipe with “GMA.”

Ingredients

5 pounds hamburger meat

1 cup white onions

1 cup red onions

1/2 cup green onion (about 6 stalks)

3/4 cup each orange, red, yellow and green bell peppers

3/4 cup celery (2 stalks)

1 1/2 packages French onion soup mix

6 tablespoons Mrs. Dash

5 tablespoons Greek seasoning

4 tablespoons Creole Seasoning

5 tablespoons garlic herb

5 tablespoons garlic rosemary

3 eggs

36 ounces ketchup

1 cup light brown sugar, divided

Directions

Preheat oven to 325 degrees.

In a large 11-by-14-inch casserole dish add hamburger meat. Separate down the middle and add 3/4 of the prepared ingredients. Cut the white onions, red onions, green onions, bell peppers and celery. Add 3/4 of these ingredients to the meat and reserve remaining for the top.

In a separate bowl, mix together soup mix, Mrs. Dash, Greek seasoning, Creole seasoning, garlic herb and rosemary. Add 3/4 of the dry spice mix to the meat mixture and reserve remaining for the top. Add the eggs, 1/2 the bottle of ketchup and 1/2 cup light brown sugar. Mix meat mixture well until all ingredients are evenly distributed. Form into a loaf the length of the pan.

In a small bowl, whisk together the remaining ketchup and brown sugar. Pour on top of the meatloaf. Sprinkle with remaining vegetables and dry spice mix.

Bake at 325 F for 80 to 90 minutes. Remove and slice into generous slices.

Food creator shares 5 healthy meal recipes for 2 on a $75 budget

Food creator shares 5 healthy meal recipes for 2 on a budget

Cooking healthy meals under a certain budget may seem daunting, but one food creator is sharing grocery lists, tips and recipes to make it a bit easier.

With $75 in hand for a trip to Trader Joe’s and five recipes at the ready, recipe developer and food blogger Jenn Lueke cooked up a new series on social media to help show home cooks how to make a handful of healthy meals for two people.

The food content creator of five years shared her full shopping list, additional best practices for your next trip to the store, plus five healthy recipe ideas with “Good Morning America,” below.

Lueke regularly concocts original recipes for her website goodeats and posts them on Instagram along with “little hacks” and more of her own personal health journey.

“I do a lot of like grocery haul type videos,” she said citing her trips to retailers that are familiar to home cooks, including Costco, Trader Joe’s, Whole Foods and more to show the prices of approachable products that are more accessible than niche influencer-backed wellness trends or products.

“Trying to show people how to eat healthy on a budget is kind of my main goal on my TikTok,” she continued. “It’s expensive to eat healthy. I think the reason people are really attracted to [my content] is they want to eat healthy, but they see a lot of influencers promoting such expensive products — and it’s really overwhelming. That’s kind of what prompted all of my healthy grocery hauls and then this series.”

She added, “I just love meal prep. It’s helped me a lot with getting healthier — being able to combine something that’s budget friendly, that you can like do with a busy schedule, you can reduce food waste, all those things check the boxes.”

For her latest series, Lueke chose to shop at Trader Joe’s because she said she finds their options to be “relatively budget friendly” especially for “produce and proteins.”

“You can shop anywhere you know you like, there’s nothing that’s brand specific,” she explained.

Plan ahead

“I like to pick four or five meals that I’m going to cook for the week and then I make my list from there and try to see what I can use for multiple things,” Lueke suggested.

For example with produce, Lueke will look to use recipes that “use the same produce every day” or one ingredient in multiple ways.

“If you really wanted to make a unique dinner every night and you didn’t plan it, you could easily spend $200 plus at the grocery store,” she said. “If you don’t plan it and you’re not having that overlap of spices and [condiments] and the proteins, you can easily rack up a huge grocery bill. It’s really about planning.”

Powerhouse ingredients that go a long way

Despite not using them in this recipe series, Lueke hailed eggs as a workhorse ingredient that can stretch to work in many meals and recipes.

Additionally, she said, “I always get chickpeas, coconut milk — it’s like a good paleo vegan option. I always get some kind of greens every week because you can freeze them and then add them to smoothies if you don’t use them — that kind of goes for all produce honestly, I always chop everything up, but if I don’t use it, I freeze it.”

Easy and versatile proteins for weeknight dinners

“I like to do like a ground chicken or ground turkey when I can. I like to do chicken thighs because they’re a little bit cheaper than chicken breasts,” she said. “[Opt] for those more affordable things [instead of] pre-cooked or pre-portioned things that just make it more expensive, because if you take a little bit of time to prep it, you’ll save like 50{d2b09b03d44633acb673e8080360919f91e60962656af8ade0305d5d8b7e4889}.”

What is chaos cooking? 3 recipes to try at home like mango jalapeno popcorn shrimp

Chaos cooking combines unlikely ingredients and flavor combinations to create a unique hybrid dish

The trend, which began popping up on social media last fall, has been described as fusion “without strict interpretations of one or the other cuisine,” chef Alex Watanabe said, speaking about his own Mexican Japanese restaurant to Eater in September.

While the term “chaos cooking” is newer, it’s something multiethnic households and chefs have been doing for years.

Menu items like cheeseburger dumplings at Mimi Cheng’s or pastrami tacos from Empellón Taqueria are just a couple notable examples.

Popcorn-crusted Mango Jalapeno Popcorn Shrimp with Popcorn

Popcorn jalapeno mango shrimp.

3 cups of popped popcorn, pulverized in a food processor

1/2 cup panko bread crumbs

1 pound 31/40 size shrimp, peeled and deveined, tails removed

1 quart peanut or vegetable oil

1 recipe Mango Jalapeno Sauce

Heat oil to 375 F in a deep fryer or dutch oven.

In a food processor, add 2 cups of the popcorn, panko and cornstarch. Pulse until coarsely ground, about 10 pulses. Season to taste.

Set up the breading station with the flour, the egg, and the popcorn/breading mixture. Coat each shrimp in flour, shake off excess, then dip in egg, letting the excess drip off, and then give it a full 360-degree coating in the breading.

Adding 1 shrimp at a time, gently place in oil, making sure the shrimp is not sticking together. Fry until golden brown, while moving shrimp around frequently to ensure they don’t stick and brown evenly, for about 2 minutes or until golden.
