5. Bread Dahi Vada

7mgfc6p

Holi 2023: Bread dahi vada is a yummy dish with festive flavours

You may have tried dahi vada and dahi bhalle, but have you tasted bread dahi vada yet? This is a yummy twist on the classic dish and is also very easy to make. These 11 Kitchen Tools I’m Obsessed With Are Also Amazing Last-Minute Gifts

These 11 Kitchen Tools I’m Obsessed With Are Also Amazing Last-Minute Gifts

This story is part of Gift Guide, our year-round collection of the best gift ideas.

Cheap pans, hand-me-down dishes, thin, generic cutlery: I spent years using starter cookware like anyone else. But once I was able to invest in quality kitchen gear I actually cared about, the most amazing thing happened. I became a better cook. Part of that surely has to do with experience points. But I peg at least some of my improvement on higher-performing tools and actually caring about the implements I use as part of the cooking process.

While I’ll probably never stop gushing about these incredibly useful kitchen tools under $25 that I don’t want to live without, there are also some favorite cooking items that I’m convinced are worth the bigger bucks — and they also happen to make great gifts.

Don’t worry, I’m not talking about $500 single-use gadget that sees the light of day once a year. I’m talking about practical cooking tools I use weekly and sometimes daily in my tiny galley kitchen. And I stand by every single one of them. I’m confident that if any of these kitchen items strike your fancy, they’ll soon become your favorites, too.

Staub

Lodge and Le Creuset are terrific, tried-and-tested Dutch ovens that cook a variety of food evenly. But I couldn’t be happier with this tall-sided 5-quart Staub Cocotte, which comes in an array of colors for pretty much any style. With a cast iron core, it isn’t light, but it is uniformly excellent. In fact, it’s my go-to cooking vessel for most things, and it goes from stove to oven to table to fridge flawlessly. My brother got a smaller model that he uses for proofing and baking bread, which goes to show the versatility of this pot.

Breville

I had an inexpensive pair of electric beaters that always gave me trouble — ditching it for this Breville Handy Mix Scraper was one of the best decisions I made, especially during this season of abundant baking. This mixer seriously does it all: It comes with whisks, creamer inserts and dough hooks! It has a built-in light so you can see what’s in the bowl! There’s a stopwatch feature so you can see how long you’ve been mixing and a pause button that keeps track of your speed settings and time while you take a break to scrape down the bowl! The cord base can rotate to get out of your way! And it has a convenient storage situation where you can keep all the beater wands!

I’ve owned an immersion blender for years, but recently upgraded myself to the Braun MultiQuick 7 for its robust design, powerful motor and fun extras, like a mini food processor attachment (like, for making quick work of onions and herbs) and a balloon whisk attachment for quickly whipping or whisking without having to go full-bore with the electric beaters.

I use this tool constantly, to process soups right in the pan, make salsa in the included beaker, whip cream into soft peaks and make quick work of pulverizing onion without hefting the food processor to the counter. It’s also wonderfully easy to clean and dry, and small and light enough to pull out from the pantry any time I need it. I can’t recommend it enough.

I may have spoiled myself buying the Google Nest Hub smart speaker display for my kitchen. I have it set up on a riser shelf on my counter, next to a phone stand where I can also keep my phone away from the worst of tea splatters and flying onions. I use the Nest Hub for everyday things like checking the weather as I’m making my morning cuppa and playing music (with song lyrics!) while I cook. I use the two hands-free timers multiple times a day, and look up recipes on the screen (you can follow these step-by-step).

There’s also an extra function where you can program the Nest Hub to forgo the “OK, Google” or “Hey, Google” wake word when you look at it and start listening to you with just a glance (Google calls this Look and Talk). That’s ultra convenient for saving some time and breath every time you want to ask for unit conversion measures, adding to or canceling a timer and skipping to the next track.

Shun

I have lusted after Shun Premier knives for over a decade and finally bought two for my new kitchen: the 8-inch chef’s knife and a 3.5-inch paring knife. Over Black Friday, I added a 7-inch Santoku blade to the mix. I adore the way the rounded handles balance, and the stunning, wavy pattern on the forged blade boasts an edge designed to hold sharpness far longer than average. That’s good for me, because the sound of knife sharpening sets my every tooth, bone and neuron on fire.

Shun Premier knives come in gray and brown wood handle options. The Classic knives are cheaper and also very good (yes, I’ve tried them out, too). But my heart belongs to the Premier line for the way they feel in my hand, and the extra aesthetics on the blade (69 layers of Damascus steel, if you’re wondering). I store them in a drawer with a blade guard case to protect the knife sharpness (and my fingers). Here are other recommended chef’s knives as well.

Amazon

Zojirushi has an excellent reputation for countertop appliances that hit the high-water mark. I’ve been beyond happy with my Neuro Fuzzy rice cooker since I bought it earlier this year. My pantry is stuffed with six kinds of rice and at least four other grains I routinely cook up. The settings are easy to use and whether I wash the grains or not, whatever I’m making comes out evenly cooked. Plus, it plays a song when starting and ending a cycle, which is much nicer than a loud beep or buzz.

The Neuro Fuzzy in particular takes up more counter space than the most compact models, and rice can take an hour for a typical cycle of even cooking. But there are lots of settings, including a quick cook mode, and cleanup is easy. (Here are meals you can make in the rice cooker other than rice.)

Breville

Buying the Breville Smart Oven Pro Toaster Oven (BOV845BSS) was one of my best kitchen decisions. It toasts, it broils, it roasts. And since it has a convection oven function, you can totally skip the separate air fryer — and cook more stuff at once. I love the countdown clock that takes the mystery out of when your food will be done, and I love that I can bake a single batch of cookies or toast walnuts faster than a standard oven, and without having to heat the whole thing first. Plus, the brushed stainless steel body looks pretty great on my countertop.

Le Creuset dutch ovens are all the rage (I actually really love my Staub Cocotte), but one of the best gifts I ever received was this Le Creuset casserole dish that can go straight from oven to table (to fridge!) while cooking food evenly and looking awesome. I would buy this all over again, and gift it, too. It comes in a range of striking colors, and shockingly cleans easily — with a little soak in soapy hot water and a dirt-cheap pan scraper. I’m the kind of person who excels at ruining dutch ovens with burned-on spots. After a couple years, this dish has remained spot-free, even after roasting dark, sticky stews (yum!).

A workhorse apron is worth its weight in gold. I’m thankful I finally stumbled on Hedley & Bennett, which makes a seemingly endless supply of thick, sturdy aprons I now can’t fail to miss seeing seemingly any time I walk into a restaurant. If these aprons can handle the stresses of a professional kitchen, they can handle the flying sauces and batter in mine. I bought myself two styles, including a Cookie Monster print that never fails to make my inner child giggle. The apron’s neck loop is adjustable, there are a lot of pockets, and so far the waist straps haven’t gotten scrunched, twisted or mangled in the washer or dryer.

I’m not the kind of wine enthusiast who owns a different glass for every varietal — not yet, anyway. Instead, I opt for one all-rounder that will work beautifully no matter which bottle I open, erring on the side of big, bold reds. I’ve been using these “Burgundy” glasses from Schott Zwiesel for years, and my Amazon search history told me I bought them five times, twice for myself and three times as a gift. Yes, I do drink white wine, rose and sparkling out of them (gasp!), and they all taste terrific. Better in my mind to drink from a glass with a too-big bowl than a cramped glass that stifles all that great wine nose.

If you don’t use an electric kettle yet, drop everything and get yourself one. This indispensable kitchen savior rapidly heats water for tea, coffee and hot chocolate, and it gives you a head start on boiling vats of water for pasta, blanching or anything else you need. I’ve owned and gifted a lot of electric kettles, and most work about the same way. This Zwilling Enfingy Electric Kettle has a sleeker, more sophisticated look and variable temperature controls. I also like that it’s got a cool-touch exterior that won’t burn you when you pick it up.

There’s no viewing window for water height and you have to feel comfortable with capacitive controls that you press and hold, but these aren’t deal-breakers for me by any means.

You’re receiving price alerts for Zwilling Enfingy electric kettle: $120

Quirkiy kitchen gadgets that make great last-minute gifts!

Quirkiy kitchen gadgets that make great last-minute gifts!
A vampire garlic crusher, a loch ness monster tea infuser mug, and a bear cheese grater

Give the gift of whimsy this holiday with these adorable kitchen gadgets!

Quirky might not be your first thought when it comes to holiday gift-giving, but these kitchen gadgets will put a little fun into an otherwise stressful time. Anyone — from expert to novice — can appreciate these innovative ideas because they’re practical tools as well. Plus, they’re all available on Amazon, so you can get them in time. Don’t wait too long though, you only have a week left!

This Magic Mushroom looks like a mushroom, but actually turns inside out to become a funnel! It fits either wide mouth jars or skinny bottles, so it’s good for transferring liquids, cooking oil, ground coffee, and more.

“This is the cutest little funnel and I love it,” said an Amazon reviewer. “The “mushroom cap” folds up in order to make a funnel, then folds back when not in use. The funnel hole isn’t super big, and you’ll want to only use liquids in this…but it’s perfectly adorable sitting on the kitchen counter…”

No need to be crabby with this cute gift! You can use this adorable red silicone crab as a spoon rest or a steam releaser — simply position it to keep the pot lid open as you cook.

It’s a hit with this Amazon reviewer: “One of the best of the best purchases I’ve made! I love this little guy so much. He fits on saucepans and skillets perfectly and can hold spoons (and scissors) when sitting on a flat surface. He’s so victorious! So pleased with his culinary skills!”

Have a tea drinker in your life? Consider this Cup of Nessie tea infuser mug. Just fill Baby Nessie’s “body” with loose tea, and then add hot water. It looks like a Loch Ness Monster floating in a teacup. Cute!

One Amazon shopper calls it the perfect gift. “This is the perfect gift for anyone who has ever even HEARD of the Loch Ness Monster! Or TEA! The tea infuser is not only adorable, it’s fun to use and easy to clean! The tin cup makes you feel outdoorsy, like you’re sitting in from of a loch in Scotland.”

Now this is a bear you actually want in your kitchen. Barry the Bear is a box grater not just for cheese, but also for carrots, cucumbers, zucchini, or anything else you want to shred.

“Barry the grater is wonderful,” said this five-star review. “Works great for zesting, grating garlic, and a small amount of cheese. He’s great for small jobs. His belly only holds about a cup of volume, that’s plenty for a one/two person meal prep. Bonus he’s cute and easy to clean.”

Add even more fun to pizza night with this amusing axe-shaped pizza cutter. It’s a great idea for kids and lumberjack wannabes alike.

This Amazon shopper agrees it’s a fun gift: “It’s super sharp, cuts well and definitely it is a super cool gift, affordable, that will put a smile on everyone’s faces. Only having as a decoration already worth the money! We absolutely love this pizza cutter!”

Keep the vampires away with this amusing garlic crusher. It peels and crushes multiple garlic cloves in seconds without a knife. Perfect for the garlic lovers in your life!

One Amazon shopper said it’s actually bought it as a joke, then fell in love with it. “THIS IS ONE OF THE BEST PURCHASES I HAVE EVER MADE!!! This little buddy handles about 3-5 cloves at a time (depending on size) and is the easiest garlic-processing-item to clean IN THE HISTORY OF EVER!!”

This Hello Kitty ramen bowl set comes with a pair of chopsticks built right in. Perfect for noodle soups of all kinds.

“Ordered this for my Granddaughters 9th birthday,” said this happy buyer. “She has only just discovered non-US foods and she loves Ramen style soups…This is a nice weight bowl, the graphics are very clear & bright.”

Imprint Baby Grogu on every grilled sandwich you ever make with this clever panini press. Perfect for the Mandalorian fan in your life, or anyone who can’t get enough of baby Grogu.

“I bought this for Christmas, everyone loves it,” said a five-star review. “It’s super easy to use and clean up is easy too. Every Wednesday (when new Boba Fett episodes come on) is officially grilled cheese night.”

Separating yolks from egg whites just got easier — and more fun. This adorable silicone egg separator will bring a smile to the whole family.

“This thing is a time and egg saver,” said this enthusiastic shopper. “This little frog gets the job done efficiently and prevents the waste that happens when the yolk breaks. Plus, it’s just plain fun to use in the morning. Wish it were a bit easier to clean, but otherwise, a great purchase.”

With the Marna Pink Piggy Steamer, you can microwave leftovers without making a big mess. Simply place it over your food and nuke it for a few minutes. It’s also great for steaming veggies!

One Amazon shopper said it was life-changing. “I wish I’d bought this long before I did, it’s so useful. It’s perfect for covering a bowl of soup or other leftovers. (We use the IKEA 365+ soup bowls and it fits exactly.) It holds tight to the bowl and I’ve never had any spillover…One month after getting this smaller size, I ordered the larger one.”

If you have Amazon Prime, you’ll get free shipping, of course. Not yet a member? No problem. You can sign up for your free 30-day trial here. (And by the way, those without Prime still get free shipping on orders of $25 or more.)

Pumpkin Cornbread with Cranberry Honey Butter

PHOTO: Pumpkin cornbread with cranberry honey butter.

ABC News

Pumpkin cornbread with cranberry honey butter.

1 tablespoon baking powder

3 tablespoons melted butter

For the cranberry honey butter

1/2 cup (1 stick) softened unsalted butter

1/2 cup whole berry cranberry sauce

Preheat oven to 375 degrees. Prepare a 9-inch baking dish with cooking spray.

In a bowl, combine cornmeal, flour, sugar, baking powder, and salt. Whisk thoroughly until dry ingredients are well combined.

In a separate bowl, combine vegetable oil, melted butter, pumpkin puree, eggs and milk. Whisk until all wet ingredients are well incorporated and smooth.

Pour wet ingredients over dry ingredients. Stir well until just combined.

Spread batter in prepared baking dish and bake until a toothpick inserted into the center comes out clean, about 20-25 minutes. Let cool before slicing into squares.

For the honey butter: Place butter in a bowl. Using a rubber spatula or a wooden spoon, fold cranberry sauce, honey, orange zest, and salt into soft butter. Mix until smooth.

Spoon cranberry butter into serving dish and chill until ready to serve.

Serve alongside warm cornbread.

Spinach Alfredo Mashed Potatoes

PHOTO: Creamed spinach mashed potatoes.

ABC News

Creamed spinach mashed potatoes.

Pessoa said this recipe is essentially a hybrid of creamed spinach and garlic mashed potatoes.

2 pounds russet potatoes (about 6-8 medium potatoes), washed, peeled, cut into cubes

10-ounce package frozen chopped spinach, thawed

2 cloves of garlic, minced

1 (8 ounce) package cream cheese, cut into chunks

1 cup grated Parmesan cheese, divided

1/4 teaspoon ground black pepper

Place potatoes in a large pot with enough cold water to cover. Pour salt into water and bring to a boil. Cook for approximately 15-20 minutes, or until tender but firm. Drain, cool slightly, and mash. Set it aside and keep warm.

Thaw frozen spinach. Using a dish towel or several paper towels, squeeze the water out of spinach. Set it aside.

In a skillet or saucepan, melt butter over medium heat. Stir in garlic and cook for 1-2 minutes until fragrant, not brown. Lower heat and pour in milk.

Using a whisk, slowly stir in cream cheese. Whisk more vigorously as cream cheese melts and a smooth sauce begins to form. Add in 3/4 cup of Parmesan cheese. Continue to whisk until cheese melts. Season with salt and pepper. Stir in spinach. Mix until well incorporated and cook for 3-5 minutes until spinach softens.

Pour warm sauce over mashed potatoes. Stir until well combined. Place in serving dish and top with remaining 1/4 cup of parmesan cheese. Serve warm.

Loaded Skillet Corn Casserole

This versatile recipe can be made with canned, fresh or frozen corn; the latter two choices will have a slightly longer cooking time.

Additionally, cream cheese works as a great substitute here if you do not have sour cream.

1/3 cup chopped white onion

1/3 cup chopped green bell pepper

2 tablespoons flour
2 (16-ounce) cans whole kernel corn, drained well

1 teaspoon Cajun Seasoning

2 tablespoons unsalted butter

1/2 cup shredded cheddar cheese

2 tablespoons sliced green onion or chopped fresh parsley

Using a cast iron skillet or heavy bottom frying pan, fry bacon until cooked crisp. Remove bacon from pan and slightly cool. Chop bacon into pieces and set aside.

Reserve about a tablespoon of bacon grease in pan. Over medium heat, sauté onion and bell pepper for 1-2 minutes as vegetables begin to brown and soften. Stir in flour. Cook for an additional minute. Add in corn and butter. Season with Cajun seasoning and sugar. Cook for 3-5 minutes.

Remove pan from heat and stir in sour cream. Return to low heat and cook for 4-5 minutes.

Heat oven broiler to high. Evenly sprinkle chopped bacon and shredded cheese on top of corn mixture. Place skillet under the broiler for 1-2 minutes until cheese melts and top is golden brown. Immediately remove from under broiler and garnish with green onions or parsley. Serve warm.

Last minute Thanksgiving turkey recipes (and a non-turkey option)

ABC News

A spatchcocked roasted turkey for Thanksgiving.

Rose tackled the main Thanksgiving dish, sharing two turkey recipes as well as an alternative poultry with a roasted chicken, sauces and a side dish, below.

BBQ Dry Rubbed Spatchcock Turkey

Servings: About 12 to 15 servings

1 cup apple wood chips (soaked in water for at least an hour and drained)

3 tablespoons kosher salt

1 tablespoon black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon smoked paprika

2 teaspoons dried mustard

For the rub: Place all ingredients in a small bowl, and whisk until fully incorporated.

For the turkey: Thaw turkey in fridge in refrigerator for 3 to 4 days until completely thawed, remove turkey thermometer and plastic trust from legs.

Remove turkey from fridge, pat dry all over, and generously season with barbecue dry rub all over and allow to come up to room temperature, about 1 hour, use aluminum foil to wrap wing tips. (*So they won’t overcook, remove aluminum foil last hour of smoking).

Set grill to 350 F, indirect heat, place drained apple wood chips over hot coals.

Place turkey in a roasting rack, breast side up, and smoke for about 2 hours until thickest part of turkey breast reads 160 F, and thigh reads 175 F to 180 F.

Lightly tent (cover) the turkey with aluminum foil and rest about 15 to 20 minutes, to allow carryover cooking and juices to re-distribute.

Honey Garlic Ginger Turkey

Prep time: About 15 minutes

Servings: About 20 to 25 servings

One 17-pound turkey (cleaned/pat dry)

1 cup large diced yellow onion

1 cup large diced carrots

2 tablespoons apple cider vinegar

2 tablespoons fresh grated ginger root

3 tablespoons kosher salt

1 tablespoon black pepper

1 tablespoon garlic powder

1 tablespoon onion powder

Add olive oil to medium sized saucepan, bring to medium high heat and sauté garlic and ginger lightly until fragrant, about 30 to 45 seconds.

Add honey, chicken stock, vinegar, and soy sauce to pan, and whisk.

Bring contents to a boil and reduce to a simmer until glaze like consistency, about 3 minutes.

For the rub: Combine all ingredients in small mixing bowl and mix until well incorporated.

For the turkey: Remove turkey from fridge and let it sit out until it comes to room temperature, about an hour; liberally season with rub on all sides of turkey.

Divide vegetables equally, half of veggies go inside the turkey cavity. Tie legs together with butchers twine.

Place the other half of veggies on the bottom of the roasting pan along with chicken stock.

With turkey right side up (turkey breast side facing up) set in roasting pan, and place pan in an oven preheated to 350 F.

Roast turkey until digital thermometer reads 160 F in the thickest part of the turkey thigh, about 3 to 3 1/2 hours, basting turkey with pan juices every 30 minutes.

Glaze turkey with honey-ginger glaze the last 10 to 15 minutes of cook time, at least 2 to 3 times every 5 minutes, until nice, lacquered and sticky.

Remove turkey from oven and lightly tent (cover) with aluminum foil, and rest about 15 to 20 mins, to allow carryover cooking and juices to re-distribute.

Servings: About 10 to 12 servings

Kosher salt and black pepper

5 sprigs fresh rosemary, leaves removed and minced

1 teaspoon finely grated lemon zest

Pat dry the chicken with paper towels.

Liberally season both sides with salt and pepper.

Allow the chicken to sit out uncovered on the counter for about an hour.

In a medium sized bowl, combine oil, rosemary, garlic, lemon juice, lemon zest, 1 teaspoon salt, and 1 teaspoon pepper, and whisk until well incorporated.

Rub down chicken with oil mixture on both sides and place breast side up in roasting rack.

Pre-heat the oven to 375 degrees. Cook chicken about 2 hours until the internal temperature in the breast reaches 160 F and the chicken skin is crispy.

Remove the chicken from the oven, lightly tent (cover) with aluminum foil and allow it to rest for 12 to 15 minutes before carving. Carryover cooking will bring the internal temperature to 165 F and allow the juices to distribute evenly.

Chef Lorena Garcia’s no-bake cheesecake.

16 ounces cream cheese softened

9-inch pre-made graham pie crust (Ready Crust)

4 1/2 cups Cool Whip, thawed or whipped cream

1 cup ginger snaps, crumbled

For the spiced caramel sauce

2 tablespoons white granulated sugar

1 teaspoon pumpkin pie spice

1/2 cup half-and-half or heavy cream

In a large mixing bowl beat together cream cheese, pumpkin, tahin, sugar, cinnamon, nutmeg and cloves with an electric mixer until combined and there are no cream cheese chunks. Gently fold in the thawed whipped topping. Spoon the cream cheese mixture into the Ready Crust.

Refrigerate 3 hours or until firm.

For the sauce: Add all of the caramel sauce ingredients, except for pumpkin pie spice in a medium sauce pan, and heat over medium-low heat. Let it cook, while constantly whisking it, for about 5-7 minutes. That is until it starts to become thicker. Turn off heat, and whisk in the pumpkin pie spice, whisk until well combined. Store in jar or serve warm.

To serve, cut a slice, drizzle with pumpkin spice caramel and sprinkle with ginger snap cookie crumbs.

14-ounce can sweetened condensed milk

12-ounce can evaporated milk

1 1/2 cups heavy whipping cream

Caramelized pineapple topping1 cup diced pineapple

Preheat the oven to 350 degrees. Grease and flour a 9-by-13-inch baking pan.

Sift flour and baking powder together; set aside.

Beat sugar and butter together in a large bowl with an electric mixer until light and fluffy. Add eggs and vanilla; beat well. Add flour mixture, about 1/2 cup at a time, mixing until well blended. Pour batter into the prepared pan.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes. Pierce cake all over with a toothpick; let cool to room temperature.

Mix whole milk, condensed milk, and evaporated milk together in a bowl; pour over the top of the cooled cake and allow to soak in (better overnight).

Whip cream, remaining 1/4 cup of sugar, and 1 teaspoon vanilla in a chilled glass or metal bowl with an electric mixer until thick. Spread over the top of the filling. Keep cake refrigerated until serving.

To serve, slice a portion of the tres leches cake and serve with caramelized pineapple on top (directions below).

1 cup, plus 2 tablespoons all-purpose flour

1/2 teaspoon instant espresso powder1/4 teaspoon salt

1/2 cup, plus 1 tablespoon salted butter, softened

1/2 cup packed dark brown sugar

1 large egg at room temperature

2 teaspoons pure vanilla extract

1/2 cup roasted hazelnuts, chopped

Sift flour, cocoa, baking soda, espresso powder and salt in a medium bowl and whisk to blend evenly.

Combine butter with both sugars in the bowl of a stand mixer fitted with the paddle attachment or use a hand mixer and beat on medium speed for 2 minutes until slightly fluffy. Stop to scrape down the sides of the bowl a few times during mixing. Beat in egg and vanilla until well combined. Add dry ingredients and mix on low until it just begins to incorporate then fold in the chocolate chunks until the dough is evenly combined. Turn the dough onto a piece of plastic wrap and wrap well. Refrigerate for at least 2 hours or overnight.

Preheat oven to 350 F. Line 2 large baking sheets with parchment paper. Let dough sit at room temperature for a few minutes to soften slightly so it is easier to scoop.

Scoop up about 2 tablespoons of dough and roll into smooth balls. Place onto prepared baking sheets spacing them 2 inches apart and flatten slightly. Place a few extra chocolate chunks and hazelnuts on top of each dough ball if desired. Bake for 9 to 11 minutes until the bottoms are evenly browned and the tops are cracked but they are still soft in the middle. Transfer baking sheet to a rack and let cookies cool on trays for 3 minutes before transferring individually to the rack and serve.

30-Minute Thanksgiving Recipes for Last-Minute Meals

30-Minute Thanksgiving Recipes for Last-Minute Meals

Thanksgiving is a time when home cooks can flex their culinary skills before an audience of family and friends. But getting the house ready for company, not to mention running various errands, can often leave little room to actually cook.

Luckily, you don’t have to necessarily spend a ton of time in the kitchen in order to impress your holiday guests. Newsweek recently spoke with Chef Adrianne Calvo to learn her top three 30-minute Thanksgiving recipes for people who have done zero prep.

Chef Adrianne has earned numerous honors and awards and opened two renowned restaurants. She’s appeared in reality cooking shows, been named the “Best Chef in Miami” and authored six cookbooks. She also has an acclaimed YouTube series, Searching for Maximum Flavor with Chef Adrianne, and counts more than 1 million Instagram followers.

So, it’s true that Chef Adrianne is an accomplished professional, but she knows what it’s like to face holiday meals under a time crunch. The restaurateur relies on some clever hacks to blow her dinner guests’ minds.

“They know I’m a chef, so I better come up with something really great,” she told Newsweek. “So these are the recipes that make it look like I’ve been in the kitchen for two days prepping—I have all the ovens on, all the pots are working—but that’s not really what’s happening.”

At Thanksgiving, people connect with one another through food and the dinner table is the star of the evening, she said. Sure, you can make your holiday meals complicated, but you also don’t have to.

The way Chef Adrianne tells it: “You can have an exquisite, beautiful holiday dinner without doing a whole lot of prep.”

A (literal) pro tip, though: People who do succumb to procrastination should bring their “A game,” Chef Adrianne said. If you’re executing a holiday meal on a quick turnaround, then keeping clean and organized is key because otherwise, you could wind up in a frenzy. Tackle one recipe at a time and measure ingredients out in advance for maximum ease in the kitchen, she added. It helps to set out pre-measured items on the counter beforehand so all you have to do is mix.

And with that, let’s get to Chef Adrianne’s top three 30-minute Thanksgiving recipes.

What Are Some 30-Minute Thanksgiving Recipes for Last-Minute Meals?

Chef Adrianne calls this recipe her “shortcut to roasting a turkey for hours on end.” It’s a delicious and flavorful play on a classic dish that’s also a fan favorite.

The herby recipe “packs a ton of flavor” and tricks guests into thinking you’ve spent hours marinating and roasting, she said.

“In fact, it takes you about 20 minutes to sear that turkey tenderloin and you’re done,” Chef Adrianne added. “So that’s like a turkey hack.”

Herb Skillet Turkey Tenderloins, Serves: 6-8

INGREDIENTS:
2 lbs turkey breast tenderloins
Canola oil
1 cup dry white wine
1/4 cup fresh flat-leaf parsley, minced
5 green onions, chopped
1 shallot, minced
2 tablespoons garlic, minced
1 teaspoon dried rosemary
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste

Pat tenderloin dry. Flatten out a bit. Season with kosher salt and pepper to your liking.

In a medium bowl, mix together wine, parsley, green onions, shallots, garlic, and dried spices. Spread the flavorful paste into the tenderloins. Re-season with salt and pepper if needed.

Using an iron skillet or large pan, heat about 1/4 cup of canola oil to medium-high heat. Cook the seasoned tenderloins for about 5-7 minutes on each side. Allow to rest before carving.

Make sure the internal temperature reaches 165 degrees F. Reserve the pan juices to serve over the sliced turkey tenderloins.

Chef Adrianne’s second clutch recipe—which features to-die-for candied quinoa, soy brown butter and cilantro mayo—is featured in one of her cookbooks. She calls it her “go-to” Thanksgiving sweet potato side dish.

You don’t have to peel the sweet potatoes, and you can shave off cooking time by cutting them in pieces, she said. The candied quinoa delivers a crunchy texture and the soy brown butter brings an “umami” factor.

“My guests are wowed,” Chef Adrianne said. “It takes me a fraction of the time than a classic sweet potato casserole, and it has all the elements.”

Skin-On Roasted Sweet Potato, Serves: 2

INGREDIENTS:
1 large sweet potato, cut into three pieces
2 tablespoon quinoa
1 tablespoon sugar
1 tablespoon unsalted butter
1 tablespoon light soy sauce
1 tablespoon cilantro
1 tablespoon mayonnaise
¼ teaspoon garlic, minced
¼ teaspoon hot sauce
1 tablespoon green onion, thinly sliced

Preheat the oven to 350 degrees F. Place cut sweet potato onto a nonstick cookie sheet. Place in oven for 15-20 minutes or until fork tender.

Meanwhile, in a small pan, melt sugar and add quinoa. Cook over medium heat for 3-5 minutes until the sugar starts to turn golden. Take off the heat and set aside.

In another small pan, heat butter to medium-high and cook for 2-3 minutes or until butter starts to brown. Add soy sauce and whisk vigorously to combine. Set aside.

In a food processor, add cilantro, mayonnaise, garlic, and hot sauce and pulse to combine.

To plate, press baked sweet potatoes on the sides to push out the flesh from the top. Add a spoonful of soy brown butter to each. Top with candied quinoa and green onions. Add a dollop of cilantro mayonnaise to each piece of dressed sweet potato.

Chef Adrianne’s third 30-minute Thanksgiving recipe is for black pepper buttermilk biscuits—and it’s sure to leave diners thinking that the dough rested for hours. The trick? Working with cold butter.

“In under 30 minutes, you have these beautiful, flaky, very flavorful buttermilk biscuits,” she said.

Black Pepper Buttermilk Biscuits, Serves: 12

INGREDIENTS:
2 cups all-purpose flour
¼ cup granulated sugar
¼ cup roughly chopped fresh thyme
4 teaspoons baking powder
1 teaspoon kosher salt
¾ teaspoon ground black pepper, divided
¼ teaspoon baking soda
¼ teaspoon garlic powder
¼ teaspoon onion powder
½ cup cold unsalted butter, cubed
1¼ cups whole buttermilk, add slowly checking for moisture
Egg wash, to brush over biscuits
Butter, to serve

Preheat oven to 450 degrees F. Lightly spray a square cast-iron skillet with cooking spray.

In a large bowl, stir together flour, thyme, baking powder, salt, ½ teaspoon of pepper, baking soda, garlic powder, and onion powder. Using a pastry blender or 2 forks, cut in cold butter until the mixture is crumbly. Gently stir in buttermilk until a soft dough forms.

Turn out dough onto a lightly floured surface and gently pat to ¾-inch thick. Using a 2½-inch round cutter, cut dough, re-rolling scraps as necessary.

Arrange biscuits in a prepared skillet. Brush tops with egg wash. Sprinkle with remaining ¼ teaspoon pepper. Bake until golden brown, 15 to 18 minutes.
