Combining buffalo chicken dip and pasta, you just know it’s going to be good! You get that thick, rich, spicy sauce smothered all over springy, chewy noodles.

This buffalo chicken pasta recipe can be easily doubled, but it’s best to use multiple dishes to make sure all of the cheese melts and the pasta cooks evenly.

It keeps for up to 3 days, so there’s no harm in making plenty to enjoy leftovers throughout the week!

I make this recipe with my homemade buffalo sauce. Note that this recipe makes more than enough for this buffalo chicken pasta recipe – luckily there are plenty of ways to use the leftovers!

Dress up a regular chicken sandwich or make everyday mac and cheese extraordinary.

How to Make Buffalo Chicken Pasta Bake

A full printable version of this recipe with ingredient measurements is available at the bottom of this post.

STEP ONE: Preheat the oven to 400F and lightly grease your 9×13” baking dish.

STEP TWO: Prepare the ziti in a pot of boiling, salted water until al dente. Save ½ cup of the cooking water, then drain the pasta.

STEP THREE: Warm the olive oil in a pot over medium-high heat. Season the chicken with salt, pepper, and ranch seasoning. Add it to the pot and sear for a couple of minutes per side until browned – it’s okay if it isn’t cooked through. Remove from the heat and set aside.

STEP FOUR: Add butter to the pan. Once melted, add the flour and whisk. A roux will form after a few minutes of continuous whisking.

STEP FIVE: Add the milk and buffalo sauce. Continue whisking until all lumps are worked through. Bring to a simmer and cook until thick enough to coat your spoon.

STEP SIX: Bring the heat down to low and add 1 ½ cups of cheddar cheese and 1⁄2 cup of Pepper Jack. Whisk until the cheese melts.

STEP SEVEN: Take the pot off the heat and add the pasta. Follow with the chicken, onions, and blue cheese. Stir until combined. If the sauce is too thin to coat, pour some of the retained cooking water and stir until thickened.

STEP EIGHT: Spoon the coated pasta into the prepared dish, top it with the remaining cheeses, and bake for 15 to 18 minutes until the cheese is melted and bubbling. Give the buffalo chicken pasta bake a few minutes to cool and garnish with extra cheese and onions if desired.

Adjust the Spice of Your Buffalo Chicken Casserole

This buffalo pasta chicken bake has a medium spice level as-is – not at all overwhelming.

However, if you find you’d like less heat, simply reduce the amount of buffalo sauce to just ¼ cup. It can also be left out of the buffalo chicken bake altogether, although it isn’t really buffalo chicken pasta at that point!

Spice lovers can amp things up by adding just a pinch of cayenne or red pepper flakes to the cheese sauce as it melts.

Buffalo Pasta Chicken Bake Recipe Variations

  • We use blue cheese. It gives that chicken wing flavor but is certainly an acquired taste. A tangy feta or some cream cheese does a great job of adding extra dimension too!
  • Any short pasta is suitable for our buffalo chicken pasta recipe. Macaroni is another popular choice, for example, as well as rotini.
  • While this buffalo chicken bake is made with breast meat, you could use thighs or tenders. You could even use shredded rotisserie chicken to really save some time!
  • Ranch is a staple of any buffalo chicken dip pasta (or just the dip on its own), but the ranch seasoning can be left out if desired.
  • The onions aren’t necessary, but the sharp earthiness they bring helps to keep each bite interesting! If you’re looking for substitutes, I recommend fresh parsley.

Can This Buffalo Chicken Pasta Bake Recipe Be Made Ahead of Time?

Buffalo chicken casserole keeps well in the refrigerator for up to three days.

It’s important to keep it chilled and properly covered so the cheese does not harden or turn in the meantime.

You could also put the whole thing together and then bake it for just an hour or so before serving. Give it 30 minutes or so for it to come to temperature before putting it in the oven.

Then, you can bake it as you normally would.

In this case, make sure the chicken is cooked all the way through before adding it to pasta.

Why Is My Buffalo Chicken Pasta Bake So Dry?

This usually happens because you have more pasta than you have sauce.

Another common culprit is undercooked pasta – it can be hard to get it al dente without following the instructions on the box, so be sure to follow them just right.

Finally, be sure to cook the sauce until it’s properly thick, ooey, creamy, and cheesy.

Total Time
55 minutes

Ingredients

  • 1 box (16 ounces) uncooked ziti
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breast, cut into ½” cubes
  • 2 teaspoons ranch seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 3 cups milk
  • ½ cup homemade buffalo sauce (see notes)
  • 2 ½ cups freshly shredded cheddar cheese
  • 1 ½ cups freshly shredded pepper jack
  • ¼ cup sliced green onion, plus more for garnish
  • ¼ cup blue cheese crumbles, plus more for garnish

Instructions

  1. Preheat the oven to 400F and grease a 9×13” pan with nonstick cooking spray.
  2. Bring a large pot of salted water to a boil. Cook the ziti to al dente according to the package directions (about 8 minutes). Reserve ½ cup of starchy cooking water and then drain the pasta and set it aside.
  3. In a large pot or dutch oven, add the olive oil and warm it over medium-high heat.
  4. Sprinkle the cubed chicken with kosher salt, ranch seasoning, and black pepper. Toss to evenly coat the chicken with the seasoning.
  5. Add the chicken to the pan and sear for 1-2 minutes per side, or just until the chicken is lightly browned– it won’t be fully cooked in the middle. That’s okay! Remove the chicken to a plate and set it aside.
  6. Add the butter to the pan (still over medium-high heat) and allow it to melt. Next, add the flour and whisk until a roux forms. Cook the roux, whisking constantly, for 1 minute.
  7. Next, add the milk and buffalo sauce. Whisk until no lumps of roux remain. Bring the sauce to a simmer and cook until it has thickened just slightly and barely coats the back of a spoon.
  8. Reduce the heat to low and add 1 ½ cups of cheddar cheese and ½ cup of pepper jack cheese. Stir until the cheese has melted.
  9. Remove the pan from the heat and add the cooked pasta, cooked chicken, green onion, and blue cheese crumbles. Stir to combine. If the sauce becomes too thin, add a splash of the reserved pasta water and continue to stir– we want a really gooey, creamy sauce.
  10. Transfer the pasta mixture to the greased pan and top with the remaining cheddar and pepper jack cheese.
  11. Bake for 15-18 minutes or until the cheese is melty and bubbling. Garnish with additional crumbled blue cheese and sliced green onion, and enjoy.

Cereal, pasta companies blast FDA for strict definition of ‘healthy’

Cereal, pasta companies blast FDA for strict definition of ‘healthy’

WASHINGTON — General Mills, Kellogg’s, and the relaxation of the country’s cereal makers are mad at the Food and drug administration. So are the packaged food items firms, the pasta marketplace, and the pickle foyer (yes, it exists).

The corporations powering America’s preferred culinary indulgences are worried their items would not be considered “healthy” less than a the latest Food stuff and Drug Administration proposal — and they’re urging regulators to rethink.

SNAC Global, which signifies firms like chip makers Frito-Lay and Utz, say the FDA’s limitations all-around included sugars and salt are too restrictive.

Barilla and De Cecco and the other brands represented by the Countrywide Pasta Association, meanwhile, argue that noodles are wholesome simply because pasta eaters generally have bigger-high-quality eating plans, and consume more greens. (It funded the peer-reviewed study that backs up that declare.)

Pickle Packers International states pickles won’t be regarded healthful below the FDA’s principles for the reason that they are far too salty – even even though “pickles have a job to enjoy in a nutritious diet plan since they are predominantly comprised of veggies and serve as a tasty condiment to other nutrient-dense foods.”

advertisement

Even the maker of the frozen-aisle favorite, Wholesome Choice, states it couldn’t follow the FDA’s new guidelines “without alienating people.”

“If the food items does not style excellent, men and women will not acquire it, and Nutritious Choice® — and the wellness added benefits it has conferred for around 30 decades — may possibly disappear from the sector,” wrote Conagra, the food items big driving the brand.

The Fda set out the tips at difficulty again in September, arguing that to be promoted as “healthy,” foods would have to consist of a specified total of key nutritious substances, like fruits and veggies, and have little included sugar, sodium, and saturated fats. The agency’s proposal would not ban unhealthy food items these that don’t satisfy the FDA’s common merely could not be labeled as healthy.

The backlash could have a true effect on the FDA’s force to update food items labels.

The Purchaser Manufacturers Association, which signifies packaged foodstuff companies like Hostess, Mondelēz, General Mills, and each Pepsi and Coca-Cola, is so upset by the FDA’s proposal that it is implying it may sue. In a lengthy, 54-web site remark, the group suggests that the regulation infringes on foodstuff companies’ To start with Modification legal rights.

“Manufacturers have the proper to label meals that are objectively ‘healthy’ as this sort of, primarily based on a definition of ‘healthy’ that is truthful, factual, and non-controversial,” the group wrote. “We are worried that restricting the truthful and non-misleading use of the phrase ‘healthy’ in merchandise labeling could hurt the two the client and the producer.”

It’s unclear no matter if the Purchaser Models Affiliation or its associates will truly provide a lawsuit if the regulation is finalized. A spokeswoman for the team advised STAT that its reviews have been not meant to suggest the group would sue but to elevate “concerns that the FDA’s proposal is riddled authorized vulnerabilities.”

The Customer Brands Association has pitched its have choice framework that would make it simpler for foodstuff to qualify as nutritious. Foods substantial in nutrition like fiber and potassium, for case in point, could qualify below CBA’s proposal, even if they really do not include things like a meaningful amount of balanced foodstuff, like fruits and veggies.

The swift backlash from the foodstuff field is a clear exemplification of the troubles the Food and drug administration has faced attempting to a lot more closely regulate nutrition in the United States. It took the Fda practically 6 yrs to come up with its proposed “healthy” suggestions. All the though, other nations have established significantly more stringent limits on unhealthy foods. International locations like Mexico, Chile, and Israel, for illustration, call for food items makers to include things like huge warnings on the entrance of their offers when they incorporate extra sodium, fat, or sugar. (The Fda declared in January that it was finding out how to put into action a equivalent warning, extra than a decade just after Congress directed the federal authorities to take into consideration the strategy.)

“It’s baffling to see the volume of pushback,” mentioned Eva Greenthal, a senior policy scientist at the Centre for Science in the General public Interest. “The Fda has its function slash out for [it], but the company just has to focus on its mission to defend public wellness and resist tension from industry, whose only mission is to income even at the charge of our health and fitness.”

Federal regulators did established a significant bar for a food items to be labeled healthful. A frozen Salmon food with environmentally friendly beans and rice cannot have a lot more than 2.5 grams for each serving of added sugar, a lot more than 690 milligrams of sodium, and extra than 4 grams of saturated unwanted fat to be viewed as healthy, according to FDA’s site. (Wholesome Choice’s Barbecue Seasoned Steak Supper has 16 grams of included sugar, though it fulfills the FDA’s criteria for both equally sodium and saturated fats.)

Even backers of more stringent nutrition policies accept that most food items People in america eat will not be capable to bear the label.

“Hardly everything would qualify, so of study course food stuff producers do not like the strategy,” said Marion Nestle, an emeritus professor of diet and general public overall health at New York College, who added the FDA’s regulation “automatically excludes the vast vast majority of greatly processed foods in supermarkets, as properly as a lot of plant-primarily based meat, eggs, and dairy solutions,” from bearing the wholesome declare.

But the FDA’s proposal received overwhelmingly beneficial remarks from nourishment experts, who say it is a significant progress from the FDA’s past principles governing healthier meals, which were finalized in the 1990s. The proposal was supported by the American Modern society for Nutrition, the Association of State Public Well being Nutritionists, and the Robert Wooden Johnson Foundation. In reality, a lot of of those teams are asking the Fda to go more, noting that some of the FDA’s guidelines could be gamed to allow for unhealthy foodstuff to nevertheless bear the nutritious label.

The FDA’s added-sugar necessity is likely the most controversial among the foodstuff makers.

The Countrywide Confectioners Affiliation, which represents Hershey’s, Haribo, and Tootsie Roll, explained to the agency to loosen the sugar proposal, and in its place to “meet individuals where by they are.” (The group’s spokesman insists it does not have a issue with the FDA’s proposal total.)

Underneath the proposal, grains and dairy products can only have 2.5 grams of extra sugar per serving. Other products, like fruits, veggies, meats, nuts, and eggs just cannot have any added sugar at all. That need would avoid a range of foodstuff Americans have occur to know as nutritious, like Raisin Bran cereal, from bearing the healthy label.

Form, the granola bar corporation, which first petitioned the Fda in 2015 to revise its definition of healthy, is boosting concerns with the agency’s approach towards sugar, too. Though the Fda granted Kind’s major request — guaranteeing nuts wouldn’t depend versus the amount of money of saturated body fat allowed in a healthier foodstuff — the business also has challenges with the agency’s rigid extra sugar procedures.

Yogurt maker Chobani elevated comparable considerations, noting that “reducing sugars to the level proposed by Food and drug administration for the ‘healthy’ declare would outcome in major, deleterious consequences to merchandise high quality, taste, and texture.”

Some of the backlash is to be predicted: The FDA’s prior principles all over wholesome labeling put comparable limitations on saturated fat and salts, but did not include any restrictions on allowable additional sugar.

The Customer Manufacturers Affiliation even argues that the Fda may not have the lawful authority to set these a rigorous limit on added sugar “given the deficiency of scientific consensus on the connection among sugar intake and diet program-associated sickness.” (The group does not offer substantiation for that claim.)

The American Heart Association, by contrast, applauded the sugar limits, noting, “Added sugars are a significant supply of excess energy and are linked with bigger total calorie intake and bigger body excess weight [and are] also linked to many metabolic abnormalities, a shortfall of vital nutrition, and amplified danger of significant blood strain, substantial cholesterol, diabetic issues, and irritation in the overall body.”

Carolyn Wong, who goes by @carolbeecooks on TikTok, is relatively new to the world of food blogging. It was a hobby she picked up during the pandemic as an outgrowth of her love of cooking and her desire to share that with others.

Her style embraces spontaneity. “In general, I just kind of like using ingredients I have on hand, since I just do it for fun,” Wong said in a phone interview from her home in Columbus, Ohio. “A lot of times I don’t really do a lot of planning things out. I just kind of think of things throughout the day and see what I have to try to get some inspiration using ingredients I like.” In January 2022, after recently enjoying homemade French onion soup, she was inspired to make a one-pot French onion pasta — “I make a lot of pasta dishes in general,” Wong said — and a viral recipe was born.

But Wong acknowledges she wasn’t the first to come up with the idea. “There’s definitely people that have thought of it before me, years and years ago, and I’ve seen a lot of people do it since,” she said.

One of those people is Joy Wilson, a.k.a. Joy the Baker, who shared a version of the dish on her blog back in 2014. “French onion is one of my favorite flavor profiles just because it feels so luxurious, but it’s actually pretty attainable with simple ingredients that I usually have in my pantry,” Wilson told me. She was inspired to create the dish when she thought about “how to get the most luxury out of a box of pasta and some onions.” While some might feel a sense of territorialism over their creation, as a veteran of the blogging world, Wilson acknowledges that’s not how things work in the recipe sphere. “I never hold on to it so tight as mine, because I’m putting it out in the world for it to be everyone’s.”

It doesn’t take hours to make an intense, dark and rich French onion soup

Wilson said her recipe was popular when she originally posted it and continues to get attention whenever she reshares it. And now, with Wong’s social media videos, the dish is gaining even more traction. “It is pretty cool that a whole new TikTok generation is finding these kinds of dishes and getting excited about it,” she said. “I feel like this technique is a gateway for people who think that they don’t know how or don’t like to cook to feel chef-y.”

Wong’s original video from early 2022 has garnered more than 1 million views on TikTok — a veritable success. But when she shared it again last month, this time capitalizing on a trend in which people list three reasons they won’t do something (with all of the reasons left blank), Wong’s video took off again to even greater heights. “That video takes like 2 seconds to make and then it has like 17 million views between Instagram and TikTok,” Wong said.

The best TikTok food creators

It’s always interesting to see which recipes gain the most traction on social media. With some, such as baked feta pasta, it’s clear as day why they become so popular. Others, such as the tortilla “hack” that is basically a folded quesadilla, required a bit more convincing for me to jump on the bandwagon. And few, such as pasta chips, still make zero sense to me. French onion pasta squarely falls into the first category. Why? Well, it’s a confluence of factors.

TikTok’s viral baked feta pasta is worth the hype

“I think people like things that are simple and they feel like they can approach at home,” Wong said. Timing also plays a role, as these cold weather months are affectionately known as soup season to some, and drawing on a classic soup is an instant pull. Combining that with a one-pot pasta ratchets the dish’s intrigue level up a notch because of the ease and, well, pasta. And it’s both saucy and cheesy, giving videos of this creation an intense visual appeal for viewers.

“I think it’s so appealing because it’s really simple and it’s stuff that you can look around your kitchen and find without having to go to the grocery store for the most part,” Wilson said. “It’s fairly adaptable and it just is a very simple way to get a lot of comfort and flavor out of super simple ingredients. And it only uses one pot, so it’s light on dishes, too.”

Wong said she “was literally just using stuff that [she] had on hand,” when she first made it. “I didn’t buy specific ingredients for it, so I feel like people shouldn’t be scared to experiment and see how it turns out.” So experiment I did.

TikTok’s B. Dylan Hollis gives wacky vintage cookbook recipes new life

I followed Wong’s recipe in my first pass, and while it was good, I thought it could better evoke the source material. The first thing I did was increase the amount of onions, because if we’re going to call something French onion pasta, then I want to be smacked in the face with onion flavor. I also decided to use port to deglaze the pan instead of white wine for the caramel undertones port often has, which complement the sauteed onions. Other small tweaks I made include tying the thyme sprigs with twine to make them easier to fish out later and using chicken stock or broth instead of beef for a cleaner flavor that lets the onions shine through more. Lastly, while parmesan cheese is undoubtedly more likely to be in a home cook’s fridge at any given time, I missed the distinct flavor profile of Gruyere cheese that typically accompanies the soup.

The result is a carby, saucy, cheesy, oniony bowl of pasta that lives up to the hype and my expectations. Give this recipe a try, and I’m sure it will do the same for you. Or, as Wong and Wilson suggest, use it as a blueprint to make use of the ingredients you already have on hand for a luxurious pasta that’s easily within reach.

Storage: Refrigerate leftovers for up to 4 days.

NOTE: The pasta will continue to absorb liquid as it sits, so it’s okay if it is still saucy.

  • 2 tablespoons unsalted butter
  • 2 medium yellow onions (1 pound), thinly sliced
  • 1/2 teaspoon fine salt, plus more to taste
  • 1/4 cup tawny port (may substitute madeira, sherry, dry vermouth, red wine, or additional stock or broth)
  • 3 cups chicken or vegetable stock or broth, preferably unsalted or reduced-sodium, if store-bought
  • 8 ounces short dry pasta, such as rigatoni, fusilli or orecchiette
  • 5 sprigs fresh thyme, tied together with twine, plus more for serving
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • 2 ounces (1/2 cup) finely shredded Gruyere cheese, plus more for serving

In a large pot or Dutch oven over medium heat, melt the butter. Add the onions and salt, stir, cover and cook for 5 minutes. Uncover and cook, stirring occasionally, until the onions are nicely browned in spots and the bottom of the pot is covered with stuck-on bits, 20 to 25 minutes.

Add the port to deglaze by scraping up any browned bits stuck to the bottom of the pot.

Add the stock or broth, pasta, thyme and pepper, cover partially and increase the heat to bring to a boil. Cook, stirring occasionally and adjusting the heat as needed to keep the mixture at a gentle, not rolling, boil, until the pasta is al dente and the liquid has reduced to coat the pasta, 15 to 20 minutes (see NOTE). Remove from the heat, discard the thyme, and stir in the cheese until melted. Taste, and season with more salt and/or pepper, if needed.

Divide among bowls, sprinkle with more cheese and fresh thyme leaves, if desired, and serve.
